Origin of the name, MIZUMI

MIZUMI is a Japanese-inspired name derived from the elements mizu (水), meaning water, and mi (美), meaning beauty. Together, they express the idea of “beautiful water” - a concept deeply rooted in Japanese culture. Water symbolizes purity, life, calm movement, and renewal, while beauty represents balance, refinement, and harmony. The name reflects the philosophy that true elegance comes from simplicity and clarity. Although MIZUMI is not a common everyday word in Japanese, it is perfectly suited for modern branding, where evocative meanings matter more than literal translation.

The name feels timeless yet contemporary, natural yet refined. MIZUMI evokes images of serene lakes, flowing water, and thoughtful craftsmanship - an ideal expression of purity, artistry, and understated luxury.

Identity and mission of MIZUMI

MIZUMI is a place of stillness, beauty, and intention. Inspired by the Japanese word for water and lake, our name reflects calm surfaces, deep clarity, and the quiet power found beneath.

At MIZUMI, we honor Japanese tradition while embracing modern expression. Every detail - from the selection of fish and ingredients to the design of the space - is guided by balance, restraint, and respect for nature. We believe true luxury is not excess, but precision.

Our mission is to create an immersive dining experience where craftsmanship, freshness, and atmosphere move together in harmony. Sushi is prepared with discipline and care, flavors are allowed to speak for themselves, and guests are invited to slow down and be present.

MIZUMI is not just a restaurant. It is a moment of calm in a fast world - a beautiful lake you return to again and again.

Head Chef Leo preparing omakase sushi at Mizumi Sushi Encino

MIZUMI Head chef

LEO

Chef Leo began his journey as a sushi chef in 1997, driven by a singular purpose: to master the art of sushi at the highest level.

For over 25 years, he has dedicated his life to perfecting his craft. His career spans rigorous training and hands-on experience at renowned restaurants and Michelin-starred kitchens throughout Los Angeles, followed by extensive travel across Japan, where he studied directly under master sushi chefs to refine both technique and philosophy.

Chef Leo’s pursuit of excellence goes beyond the kitchen. In his search for uncompromising quality, he personally visited fisheries, markets, and producers across Japan, building relationships with the craftsmen behind the ingredients. Each dish he serves carries not only refined technique, but also the care, tradition, and goodwill of the fishermen and producers who made it possible.

At Mizumi, Chef Leo cooks with gratitude—for the sea, for the artisans he has learned from, and for the guests he serves. Hearing our guests say, “I’m glad I came. I will definitely return. Thank you,” is both our greatest reward and our motivation to continue raising the standard every single day.

MIZUMI’s
commitment to Sushi

At Mizumi, sushi is not a trend - it’s a lifelong discipline. Every detail, from the temperature of the rice to the angle of the knife, is guided by deep respect for Japanese tradition and an uncompromising pursuit of excellence. Our chefs work only with the highest-quality fish, sourced daily and selected for peak freshness and balance. Rice is seasoned precisely, aged thoughtfully, and paired intentionally with each cut. Nothing is rushed; nothing is accidental. Each piece is prepared to honor the ingredient and the moment it’s served.

Mizumi believes true sushi is about restraint, purity, and trust between chef and guest. We don’t hide behind excess - we let craftsmanship speak. Every bite reflects patience, technique, and a quiet confidence built over years of dedication. This is our promise: authentic sushi, prepared with integrity, served with intention, and remembered long after the last course.

Fresh wasabi preparation for omakase sushi

MIZUMI’s Signature Wasabi Selection

At MIZUMI, wasabi is treated as an essential element, not a garnish. We source premium fresh wasabi from renowned growing regions, chosen for purity, aroma, and balance. Multiple varieties are used, each thoughtfully paired with specific fish and our seasoned shari, enhancing natural flavors without overpowering them. Every bite is calibrated to create harmony between heat, sweetness, and umami.

Artisanal soy sauce collection for sushi pairing

Rare Soy Sauce Collection

We curate an exceptional selection of artisanal soy sauces, each chosen to complement specific ingredients rather than mask them. Our collection includes traditionally brewed, wooden-barrel soy sauces aged for depth and complexity, carefully selected from an extensive range of rare varieties. Every sauce is paired with intention - enhancing umami, balance, and aroma - so each piece of sushi expresses its true character with precision and restraint.
